Thank you for helping me choose a name for this lovely side! Potato clouds! Aren’t they pretty? They are so easy to make too, and taste great! Make your simple mash into something wonderfully delicious!
What you will need:
- 5 medium size yellow flesh (Yukon) organic potatoes
- 2 cloves garlic
- 1 tbsp salted butter
- 3 tbsp cream cheese
- 1 tbsp chopped chives
- 1/2 cup milk
Bring to boil the potatoes in a pot of salted water.
When potatoes are tender, (you can check with a fork) drain the water, and mash with potato masher.
Add the butter, cream cheese and milk, mash together and blend till creamy stir in the chives.
You may need to add more milk until desired texture.
The potatoes are salted from when they boiled no need to add extra unless needed.
Let rest for 5-10 to cool a bit, but still warm.
Grease baking sheet, line with a piece of parchment paper.
Take a large Ziploc Freezer bag, cut one end to make a hole to pipe out the potatoes.
Pipe swirls of mash potatoes on the baking sheet.
Bake under broil till golden on top takes about 3-5 mins.
Let potato clouds rest for 5 mins before serving, so that they glide off with ease.
