This chocolate donut is for all you lovers of chocolate glazed donuts from Timmies! That is my favourite doughnut including the walnut glazed chocolate and toasted coconut! Ohh there’s an idea!
I made the batter with coffee for added flavour, you can’t tell or taste the coffee it just gives the chocolate a richer flavour. As this was my first time making it, I was adding the liquid 1 tbsp at a time until I got the right consistency it came to 9 tablespoons, you may find that you may need an extra tablespoon or not.
Baked doughnuts are only good the day they are baked, so do not make a day ahead, I recommend serving as soon as the glaze is hardened, as they tend to dry out fast if you have them out for too long.
What you will need:
- 1 and 1/2 cups organic or unbleached white flour
- 1/2 cup dark Dutch cocoa
- 1/2 tsp baking soda
- 1 and 1/2 tsp baking powder
- 3/4 cup sugar
- 1/2 tsp salt
- 2 eggs
- 4 tbsp softened unsalted butter
- 1 tsp vanilla
- 9 tbsp hot coffee
Sift dry ingredients except for sugar. Beat sugar and butter, add eggs mix and add in the flour mixture, add in the hot coffee and vanilla. Stir until well mixed. Pour into a freezer bag and cut a small slit in the corner of the bag.
Pipe out in the greased doughnut pan. Bake at 350 for 10 mins for large pan and 5 mins for mini donut pan.
For glaze:
- 1 and 1/2 cups powder sugar
- 3-5 tbsp milk
- 1 tsp vanilla
Stir milk into the powder sugar starting with 2 tablespoons and vanilla, then continue to add milk until it becomes a thin texture.
