- 1 cup bulgur
- 1 cup orange lentils
- 1 large onion
- 3 tbsp olive oil
- 1 tbsp tomato paste
- 1 lemon
- 1 tsp salt or more to liking
- 1-2 tsp cumin
- 2 green onions
- 1 cup chopped up parsley
Cook lentils in 3 cups of water, when there is a small amount of water add the bulgur. Stir, cook until water evaporates.
Saute onion till tender, stir in tomato paste I add a pinch of paprika, add cumin and season with salt.
Stir in lentil mixture mix in, cook until doughy 5-10 mins.
Cover put aside 1 hour.
Mix in parsley, and chopped green onion, shape them like kofta shape.
Place lettuce on bottom of platter and arrange on top, add some lemon wedges. Keep refrigerated till ready to serve.
When serving you can eat like that, or individuals can wrap up kebabs with lettuce, make as wraps and enjoy!!
These are so delicious! I just added some pepper paste and substituted cilantro
for the parsley.
