I have always wanted to try panko bread crumbs, and I have to say I cannot make chicken cutlets again with out them! Its crunchy and the chicken is tender & moist!
I didn’t make it the traditional way with an egg wash, instead, I dipped the chicken breast in plain yogurt, you can make it with egg wash and flour if you like.
If you choose to do so, dip chicken first in flour, then egg wash and then the seasoned crumbs. The yogurt though in my opinion works better, makes the chicken moist.
If your using whole breast cut them into ‘fingers’ about the size of a chicken tender.
The panko crumbs come unseasoned so you have to season them. I used Greek seasoning by Club house, seasoning salt, garlic salt and dried parsley.
Dip the chicken pieces into the yogurt, then dip and cover chicken with panko crumbs.
In a frying pan add 3-4 tbsp organic coconut oil or veg oil (allow to get hot for frying), add in 3-4 pieces of chicken at a time. Adding oil as needed.
Fry on both sides on medium heat till chicken is fully cooked.

- Boneless skinless chicken breast or chicken tenders
- Panko Crumbs
- Plain yogurt
- Seasonings
