Who doesn’t like a crunchy dill pickle? I love them, problem is some jar labels can be deceiving! I hate when that happens…you open a jar of pickles and they turn out soggy and flimsy! Crispy and crunchy is what I want…so you know the saying when you want something done do it yourself! I took those words and ran with it to the kitchen and made my own pickles :)…
Potatoes with Herb Garlic Sauce
I was craving scalloped potatoes but with the temperature being 100 degrees today and my house is a sauna, I didn’t want to turn the oven on.
Since I was barbecuing the steaks I needed an easy side dish, I had made beans in the crock pot cause that is what my kids like…but I like potatoes with my meat! I had red skin potatoes that I put to boil and thought I would just eat it with some butter and salt as I like potatoes like that….
Fried Zucchini with Honey
When I was a kid my Aunt Angela would make fried zucchini and my cousins and I would eat it with honey! It tasted great! I still love it with honey! Rigatoni with Beets
I was out in my backyard this morning when I noticed some of the beets were coming out from the ground, they looked small but if I didn’t pull them out I am sure something would get to it before I did…so I pulled out 3 bunches of beets!
I just love beets, when I was pregnant with my son one of my cravings was pickled beets!
The great thing with beets is that not only is the bulb edible but all of it is! The stems, leaves are edible and delicious! Its the perfect veggie that goes a long way….you can even use the liquid from the beets after boiling….haven’t decided yet what will become of that….I will keep you posted….stay tuned!…
Green Bean Casserole
Mmmm green bean casserole with homemade mushroom soup….can it get better than that!? I love cream of mushroom soup, and I love green beans this is the first time making it into a casserole! It turned out delicious! I didn’t have any bread crumbs for the top, if you have any on hand just sprinkle some on with Parmesan for a nice crunchy topping.

Mediterranean Style Green Bean Stew- Taze Fasulye
Mashurka in Albanian or taze fasulye for fresh green beans in Turkish. This is a very common dish around the Mediterranean, you can make it with stew meat or ground meat, or with out meat at all!
We are not big meat eaters so I don’t add much…sometimes I add ground beef, you can always make it vegetarian….its delicious in anyway you make it. I get my meat from the butcher, and pack it in the portions that are suitable for my meals. One pound of stew meat is approximately the amount you will need, use as much or less as you prefer.
