Acma- Turkish style bagel or soft rolled bread can be made savoury or sweet. It`s a soft dough that is in a twist and rolled up in the shape of a bagel and baked.
It'
s so good when freshly made and served at breakfast, they will stay soft for the day but must be served the same day. You can add filling like olive paste or leave it plain or add other pastes if desired.
- 2 eggs + 1 egg yolk for brushing the top
- 3/4 cup warm milk
- 3/4 cup warm water
- 1/2 cup olive oil
- 2 and 1/4 tsp yeast
- 1 tbsp sugar
- 1 tsp salt
- 4 cups flour
- 1/4 cup salted butter melted
- black seeds and or sesame seeds (optional)
Boil the water and combine with the milk, (water will be hot, milk is cold, together making the perfect temperature) add the yeast and sugar, stir and allow the yeast to foam on top, this will take a minute or two. In the mixing bowl whisk together the oil, and eggs, stir in the milk yeast mixture. Add in flour and salt, start to knead, if your using a Kitchen Aid mixer with dough attachment, knead until dough forms a ‘funnel’ and dough is formed, the dough will be sticky and soft.
Grease bowl, cover with plastic wrap and tea towel, allow to rise for an hour.
Remove dough from the bowl, cut into 8 triangles with a pastry cutter, then cut each triangle in 3 pieces; should come up to 24 balls. With your finger tips, flatten out each ball of dough. Rolling with a rolling pin makes for a tough dough, so it’s better just to use your hands. With your finger tips (or a spoon), drizzle a generous amount of the melted butter on each circle. Take a circle and top it with another circle; you will end up with 12 acmas.
Now take each doubled circle and make it a rope and twist it. If you are adding jam or olive paste do this before you twist it.
Place on a parchment lined baking sheet, brush with egg yolk, then sprinkle with black seeds and or sesame seeds, allow to rest for another 1/2 hour. Bake at 400 for 15 minutes.
