One of my childhood favourite cookies was thumbprint cookies! Helping my mom and aunt Angela making them is a memory that I cherish. Picking out which jam to go on the cookies was fun too! What makes them even better is perfecting the recipe over the years. Oh and homemade jam just brings it home!
You can make this with just butter, I have tried it before I just don’t like the texture, its more crispy where as I prefer it to be chewy and tender, its up to you:)
Here is a link for my homemade jams, anyone of them will do:)
So from my kitchen to yours Bon appetite!
What you will need:
- 1 stick softened unsalted butter
- 1/2 cup vegetable shortening
- 2 egg yolks
- 1 tsp vanilla
- 2 cups flour
- 1/2 cup sugar
- 1/4 tsp baking soda
- 3/4 tsp salt
- 1 tbsp plain yogurt
In mixing bowl cream butter, shortening, and sugar until light and creamy.
Add in egg yolks and vanilla, beat until blended.
In measuring cup sift the flour, baking soda and salt, add to the butter mixture and beat until well blended, add yogurt beat until dough softens takes half a minute.
Take dough and shape into balls and place on a ungreased baking sheet 1 inch apart. Indent with thumb, if you prefer you can add the jam before baking, bake at 350 for 10-12 mins, if you making mini cookies bake for 7-9 minutes.
Remove from oven, and if you are adding the jam after baking add it now. Remove gently from pan unto serving dish. Enjoy!
This recipe looks perfect, I tried making a "thumbprint" cookie the other day using a shortbread recipe, can we say failure! Was awful, not what I wanted at all, will definitely be trying this!
