I had about a cup worth of strawberries left from the season, I did make a cobbler last night with strawberries and rhubarb and what was left of the strawberries I decided to bake something instead of freezing the rest! I did get to make some freezer jam with the other quarts of strawberries and that is what I used in these swirls, that is why the jam is noticeably fresh and bright.
I had hoped to make these with ricotta but didn’t have any and was not leaving the house in this weather. I did have cream cheese and so I thought it work and I was right, it did work and tasted great! My mom and daughter Sara went crazy over them, trust me when I say these two are the pickiest people around, it was a great compliment to me that they enjoyed it so much!

I hope you enjoy them as well, they are super easy to make using store bought puff pastry, you can make your own if your up to it!
Make sure to dry the strawberries after rinsing.
What you will need:
- 2 rolls of thawed puff pastry
- 1 8 oz brick of cream cheese or ricotta
- 1 cup sliced strawberries
- 3/4 cup strawberry jam (approx)
Thaw the puff pastry and sprinkle some flour on the bottom of the pastry so that it doesn’t stick when rolling. Soften cream cheese so you can easily spread it. Divide and spread half the amount of cream cheese on both pastry sheets, spoon over jam on both as well, then top with strawberries. Cut into strips and roll up. Add swirls to a parchment lined baking sheet and bake at 400 until golden brown takes about 20- 25 minutes depending on your oven. Remove and transfer to serving plate and dust with icing sugar. Enjoy!
You can make it into a strudel as well! Simply spread softened cream cheese, strawberry jam and top with sliced strawberries.
Cut about 8 slits on each side and braid. Brush top with egg yolk and sprinkle course sugar such as cane and bake at 400 till golden. Cut into 6 equal serving sizes. Enjoy!
