Roasted chicken with root veggies is a favourite in our house, especially in the winter when root veggies are in season. You can use sweet potato, carrots, parsnips, any root vegetable will work, I add whatever I have at home at the time.:)
What you will need:
- 1 chicken
- baby potatoes or regular size cut up
- 1 sweet potato or parsnips or both
- 1-2 carrots
- 4-5 cloves of garlic
- butter & olive oil
- Poultry seasoning
- Seasoning salt
- Garlic salt
- Paprika
Rub the chicken with the seasonings and some softened or melted butter and olive oil, marinate for 4 hours. Peel carrots, sweet potato or parsnips cut up and combine with the potatoes and garlic in a bowl with oil and seasonings.
Add to the roasting pan along with the chicken. Pour 1/2 cup water around the veggies.
Bake in 400 oven for 15 mins lower the heat to 375 and cover bake for another hour till juices run clear, and it has reached a safe temp.
