One of our families favourite meal is roast chicken with potatoes! My mom always roasted them together in the same pan, gave so much flavour to the potatoes, I added the garlic which makes it even better!
What you will need:
- 1 whole chicken cut into 8 parts
- 1 bag of multi coloured potatoes*
- 6-9 cloves of garlic
Seasonings for chicken:
- seasoning salt
- garlic salt
- paprika
- Montreal chicken spice
- poultry seasoning
- salt
- 3 tbsp vinegar
- 2 tbsp olive oil
- fresh springs of rosemary if you have
Marinate chicken with vinegar, oil, seasoning salt, garlic salt, paprika, poultry seasoning, salt, Montreal chicken spice, I don’t measure I just sprinkle it on, marinate in the fridge for at least one hour.
For potatoes:
- 2 tbsp olive oil
- garlic salt
- seasoning salt
- salt
- 1 tsp or more of dry rosemary
Season potatoes with seasonings and oil.
Place chicken, and potatoes in baking pan add cloves of garlic. Bake at 400 F for 1 hour or until chicken is done.
* If you can’t find multi coloured potatoes you can use other baby potatoes, or regular and cut into bite size.
I love the idea of the baby potatoes! And I love how you kept the skin on. I was just talking to Laila the other day and she was telling me how it's so much healthier. I like to add onions too when I make chicken and potatoes and they get all caramelized but I don't know if your kids like onions lol.
