Qofte with mixed veggies is a great easy dinner idea!
What you will need:
- 2 zucchini cut into small cubes
- 2-3 potatoes cut into small cubes
- 4 cloves of garlic cut into half
- 1 cubenelle pepper julienne cut
- 1 red bell pepper julienne cut
- 10 fresh button mushrooms sliced
- 1 tsp tomato paste
- 2 tsp pepper paste
- 1 cup water
- seasonings for veggies:
- 1 tsp garlic salt
- 1 tsp seasoning salt
- 1 tbsp paprika
- salt and pepper
For the kafta you need:
- 1 lb lean ground beef
- 1 piece of bread soaked in water and squeeze out liquid
- 2 tbsp ketchup
- 1 tbsp chopped or dry parsley
- 1 tbsp dried oregano
- 1 tsp cumin
- 1/2-1 tsp garlic salt
- 1/2-1 tsp seasoning salt
- salt and pepper
Cut up veggies, add to pan and add seasonings to the veggies. In a cup add tomato and pepper paste then fill with water, stir well, pour over veggies.
Mix the meat with seasonings, bread, and ketchup. Shape ground meat mixture into qofte balls. Arrange qofte with the veggies in the pan. Cover and bake in oven at 375 for 1 and 20 mins or until potatoes are tender.
