My kids love when I make them these peanut butter balls, I love it too as it has way less ingredients than the store bought peanut butter candies. You can make them with milk or dark chocolate, if you have chocolate bark that is even better. It is easier to work with and gives a smoother texture.
Just wanted to mention something, I have been making this recipe for years now and never had a problem. For some reason the last two times that I made them the mixture was dry, I wonder if its because I am using a different peanut butter, this never happened before…reason I am sharing this with you is to give you a heads-up just in case it happens to you. What I did to fix the problem was drizzle some light tasting olive oil until the mixture got soft, it works out great! I have made it a couple times just with olive oil and no one could tell, I do mention that in the recipe.
To make these vegan, use dairy free chocolate and olive oil.
What you will need:
- 2 cups icing sugar (powdered sugar)
1 cup peanut butter
3 tbsp butter, softened*
1/2 cup graham cracker crumbs
Approx 2 cups semi sweet or milk chocolate chips
Beat sugar, peanut butter and butter. Stir in the crumbs. Shape into 1 inch balls. Place on waxed paper-lined cookie sheet. Chill until firm. In a double boiler, melt the chocolate, stir until smooth. Dip the peanut butter balls in the melted chocolate and place on a waxed paper-lined cookie sheet; chill. Store covered in refrigerator.
*I used olive oil (not extra virgin) a couple of times and you couldn’t even tell. I just poured it in lightly until the mixture became soft. No one knew, after I told them I used olive oil, they were surprised:)
**I do not have a microwave, if you do you can melt the chocolate in the microwave.
