Since it is peach season here I am trying to make use of all the delicious sweet peaches! This recipe is easy and makes a beautiful summer dessert!
I took the idea from my strawberry-cheese-swirls and used my peach-freezer-jam and fresh peaches for this recipe. You can use fresh ricotta cheese, which my family prefers, or cream cheese; whatever you have. I have made it with both and I like them equally.
For the peaches you want them to be ripe so they can fold up. You may want to sprinkle them with cornstarch if they are really juicy.
What you will need:
- 2 rolls of thawed puff pastry
- 4 -6 oz cream cheese or ricotta
- 3-4 peaches, sliced thinly
- 1/2 cup peach jam (approx.)
Thaw the puff pastry and sprinkle some flour on the bottom of the pastry so that it doesn’t stick when rolling. Cut into strips, spread some cream cheese or ricotta on each strip, drizzle with jam and lay about 6 slices of peaches across and roll up. Add swirls to a parchment lined baking sheet, or you can bake them in a muffin tin for neater looking swirls like in the photos (use a non stick spray if you doing this). Bake at 400 degrees F until golden brown takes about 20-25 minutes depending on your oven. Remove and transfer to serving plate and dust with icing sugar or glaze. Enjoy!
