I was busy in the kitchen all day yesterday, roasting tomatoes, baked a sweet potato casserole, made beef and cabbage stew for dinner…with all this happening I decided to make mint fudge! I had some left over evaporated milk left from the casserole, and didn’t want it to go to waste!
How many times have I left the extra in the fridge just to forget about it, then it goes down the drain! Not this time…no no no…I used it up and made something delicious with it:)
What you will need:
- 1/2 cup evaporated milk
- 1/4 -1/3 cup sugar
- 1 bag of mint chocolate chips (1 and 1/2 cups)
- 3/4 cup semi-sweet chocolate chips
- 1 cup marshmallows
- 1 tsp vanilla
Heat evaporated milk with sugar, stir on low heat till sugar starts to dissolve, add in the marshmallows, stir until melted. Remove from heat, add in the chocolate chips and stir in until chips are melted. Place a sheet of wax paper or parchment into a 8×8 pan and butter the bottom and sides, if your using parchment, wax doesn’t stick. Pour fudge into pan, and refrigerate over night.
Cut into small squares and enjoy:)
I am terribly guilty of leaving 1/2 empty cans of evaporated milk in fridge and finding them months later. :O I may give this a try. I even have some left over marshmallows I should use up. Gabe loves chocolate mint fudge but dislikes anything else minty! Strange.
