I had some ripe mangoes and peaches in the fruit bowl and thought of what to make with them, I could have made a dessert I suppose but I felt like something different…something that would go with dinner!
I thought of making fish tacos, but we had fish 3 times this week! So then I thought about making some chicken kabobs with pineapple. I remembered seeing mango salsa at the store and thought hey why I don’t I just make some!
I chopped and diced everything that I thought would go well together and came up with a delicious salsa!
I thought about adding tomatoes, but I didn’t. I wasn’t sure how I would season it, so I just added some good old sriracha and lime juice. Turned out really good, and as you can tell by the pictures it looks really good too!
I used 1 and 1/2 ripe mangoes, two ripe peaches, half of a small red bell pepper and half of small orange bell pepper, half of a jalapeno pepper, two teaspoons worth of diced red onion.
For seasoning I just squeezed half a lime, you can add more. I also added some sriracha. I was thinking of adding parsley to it, but thought nah…maybe cilantro would go good but I don’t like cilantro so you can try adding some if you like it.
Refrigerate until ready to serve. Enjoy!
