Ever since I seen these cookies on Pinterest, I have been wanting to try them out! It is quite a popular recipe! I noticed that others that tried this recipe, had different reviews and or experiences with it!
Some thought it wasn’t lemon-y enough, others that the cookies turned out fat and round not flat like the original, others said it wasn’t sweet enough that you need icing…so I took all this and more into consideration and decided to just try it out myself!
My conclusion after trying them out was…these were one of the best cookies I ever tried! I have to admit I was kinda scared after reading that some others that tried the cookie didn’t turn out, but mine did…I mean they don’t necessarily look the same, but they taste great! It was the perfect amount of sweetness, I did add a bit more lemon juice and zest to the batter, the lemon taste was spot on!
Mine didn’t turn out big and round, but the didn’t totally flatten either…well they did but they are on the thicker side, the texture was good, a bit chewy, and soft.
I think, well I have an idea what could be the problem (concerning the flatness)…I could be wrong…but hear me out!;) Over the summer I went to my cousins bakery and helped bake some cookies, he had a convection oven and he lined the baking sheets with Silpat liners, the cookies may I add were phenomenal!
He gave me some cookie dough to take home, I rolled them and baked them on parchment, but mine baked differently! Those were flat and soft, mine turned out a bit fat and rounded, even the texture was different! Nothing like the ones baked there! Convection ovens have a fan that evenly distributes the heat, for a perfectly baked cookie!
Well till the day comes till I get a convection oven, I will have to learn to be satisfied with how my oven bakes! Or it could be the Silpat liner, I could be wrong, but till I try this recipe out again using a convection or using a liner I wont know for sure!;)
Oh and another thing, I noticed many cookies looked yellow, after making them I realized that they must have added food colouring, because they looked so yellow! My dough didn’t have a yellow colour to them, I did want them to look more yellow then they did…so I went through my gel colours that I use for icing, and dipped the end of a toothpick and added it to the dough, it changed the colour just a bit. I could have added more, but I am not really a big fan of food colouring (even though I do use it for icing, just don’t prefer to use it in food if I don’t have too).
Since I originally posted this (today is July 24, 2014), I did get a convection oven and a Silpat liner and it didn’t make a difference! They still don’t flatten or look as lovely as hers. Wondering what it is that I am doing wrong? Anyone else have a similar problem?

What you will need:
- 1 egg
- 1 stick softened unsalted butter
- 1 cup sugar
- 1 TBSP and 1/2 of lemon zest ( I used the zest of 1 and 1/2 lemons)
- 1 and 1/2 TBSP lemon juice
- 1/4 tsp sea salt
- 1/4 tsp baking powder
- 1/8 tsp baking soda ( I didn’t have a 1/8 spoon, so I measured it in a 1/4 tsp measuring spoon and remove half the amount to make 1/8)
- 1 and 1/2 cups flour
- 1/2 cup icing sugar (powdered sugar)
Cream softened butter, and sugar till light and fluffy. Add in egg, lemon zest and lemon juice. In a 2 cup measuring cup sift together with a whisk the flour, baking soda, baking powder and salt. Pour into the butter mixture and combine till forms cookie dough.
Line baking sheet with parchment paper.
Add icing sugar into a bowl, roll cookie dough into small 1 inch balls ( use more if you want bigger cookies) and dip into sugar, place cookie balls 2 inches apart on baking sheet and bake at 350 for 9-10 minutes.
Remove from pan, and transfer to cooling rack. They sure go fast! Enjoy!
