We love waffles, probably as much as we love pancakes. I have tried many different recipes since I first got my waffle maker. Some were disappointing and others were great! The first waffle recipe that I really liked was from Lynnette mooreorlesscooking, it was crispy and delicious. I noticed though no matter the recipe, eventually waffles do get a little soggy if left out and not eaten right away. What I started to do is after cooking them all, I add them back to the waffle maker and allow them to crisp up before serving, on days where everyone isn’t coming in the kitchen and grabbing their waffle!
You can also make them crispy by adding them to the toaster, that is what I do with the leftovers…that is if we have any.
I guess you can tell we like our funfetti, it wasn’t too long ago since I posted my funfetti-pancakes, it sure does make breakfast fun! The kids asked if we can add the vanilla gelato on top, and it was funny because I was thinking the same, I guess you can say they take after their mom! 😉
My adaptation from mooreorlesscookingblueberry-waffles
What you will need:
- 2 cups flour
- 4 tsp baking powder
- 2 tbsp sugar
- 1/2 tsp salt
- 2 eggs
- 1 and 1/2 cups milk or 1% buttermilk
- 2 tbsp vinegar if using milk
- 4 tbsp unsalted butter
- 1 tbsp shortening
- 1/2 cup funfetti
Melt butter with shortening.
Sift dry ingredients together in a bowl using a whisk. Add in the egg and butter milk, or milk with vinegar. Whisk together till well combined. Stir in funfetti.
Grease waffle maker each time you make a waffle.
Add batter with ladle to waffle maker. I set it at 4 and sometimes 4 and 1/2 for a nice crispy waffle.
When serving, spread some butter (I like salted), maple syrup and if you want a scoop of vanilla ice cream or gelato. Enjoy!
