We love our salad; dinner just isn’t the same without it! Adding beans to a salad makes it more filling so you can have it by itself for a snack or lunch. This salad is made with chickpeas. Delicious, healthy and easy to make.
I forgot to add the onion to it; I remembered after I took the photos. Fyi it tastes fine without it but onion does make it better!
What you will need:
- 1 can chickpeas
- 1 tomato
- 1/2 red pepper
- 2 tbsp diced red onion
- 1/2 cucumber
- 1 cup worth of parsley
- 1 lemon
- olive oil
- salt
Drain and rinse the chickpeas. Chop and dice all the veggies and parsley, and add the chickpeas and veggies in a bowl. Pour over the lemon juice and drizzle olive oil and season with salt. Adjust as needed by adding lemon juice, oil and salt to liking.
Serve right away and keep leftovers refrigerated.
