This dish is tasty, easy and fast to make! You can serve it with pasta such as orzo or rice! Its the perfect dinner idea when you are short on time.
What you will need:
- 4 boneless chicken breast cut into half (makes 7-8 pieces)
- 2-3 red peppers or multi coloured peppers if available
- 1 and 1/2 tsp Montreal chicken spice
- 1 and 1/2 tsp paprika
- 1/2 tsp seasoning salt
- 1/2 tsp garlic salt
- butter or olive oil (for chicken)
- olive oil (for peppers)
Clean and cut peppers, then in a pan heat 4-5 tablespoons of olive oil, add peppers and cook till tender and crispy on edges, season with salt; remove from pan.
In the same pan add 2 tsp butter and a little olive oil if need be, add seasonings to chicken, cook chicken breast and brown on one side, then flip over and cover the pan with lid (or a piece of foil) it keeps the moisture in (and makes it saucy), cook on low to medium heat, if it gets dry add a little water or broth.
Add in peppers when chicken is just about done cooking.
Serve with rice or plain pasta such as baby shells or orzo, or you can have it on its own, with a fresh loaf of bread and salad.
This recipe is delicious!!!! I omitted the salt & pepper on the red peppers (simply because I forgot to add them), and it was still so incredibly flavorful. I used 1 lb chicken breast, but probably could have used 1.5 lbs with the amt of seasoning. Served the dish over buttered orzo & poured drippings from the pan over everything. Served also w/ salad on the side. Whole family loved it and was asking for more!
