One of my favourite things as a kid was walking into the kitchen and seeing my mom making home made chicken noodle soup with chicken salad sandwiches. My aunt used to make chicken noodle soup with these little ball shaped noodles called acini di pepe, whereas my mom made them with egg noodles or ditalini. I would get so excited about it, I just loved it so much…now I can make it for myself anytime I want!
Soup
- 1 whole chicken or 5 to 6 chicken pieces
- 1 pot of water
- 1 carrot, peeled
- 1 celery stick
- 1 onion
- filini noodles, or orzo, or egg noodles or acini de pepe or ditalini
- 2 chicken flavoured cubes
- 1/2 to 1 tsp turmeric
For the soup, add all the ingredients (except the noodles) in a large pot, bring to a boil, and let simmer and cook for about an hour or until chicken is fully cooked.
Remove veggies and chicken from the pot and strain the broth so that you have a clear and clean broth. De-bone the chicken once it has cooled. Discard the onion and celery. If you like, you can cut up the carrots and add back to soup.
Now is the time you add the noodles to the soup. About 1/2 cup should do depending which noodles your using and how watery or thick you like your soup. Adjust the seasoning, if needed. You can garnish with some chopped fresh dill or parsley and if you like you can serve with lemon.
Chicken salad
- chicken pieces
- 3-4 heaping tbsp mayonnaise
- 1 tsp mustard
- 1 stick of celery chopped small
- 1/2 small head of lettuce chopped up small
- salt and pepper to taste
- 1/4 tsp celery salt (optional)
- 1/2 tsp poultry seasoning
Mix all ingredients together, and make into sandwiches with fresh bread.
