My kids love cheesecake, it’s their absolute favourite dessert, I have tried many different recipes and the one I always go back to this recipe.
This is my adaptation from this philadelphia-new-york-cheesecake recipe.
What you will need:
- 1-1/4 cups graham cracker crumbs
- 1/4 cup butter, melted
- 1/4 cup sugar
- 3 pkg. (250 g each) cream cheese, softened
- 1 cup sugar
- 2 tbsp flour
- 1 tbsp vanilla
- 3/4 cup sour cream
- 3 eggs
- 1 can (19 fl oz/540 mL) cherry pie filling
Preheat oven to 325 . Mix crumbs, 1/4 cup sugar and melted butter; press firmly onto bottom of spring form pan.
Beat cream cheese, sugar, flour and vanilla in large bowl with mixer on medium speed until well blended. Add sour cream, mix well. Add eggs one at a time, mix until blended. I noticed the longer you beat the fluffier the batter becomes. Pour batter over the crust.
Bake 1 hour and 10 min or until centre is almost set, mine is usually still a bit jiggly but firms up as it cools. Cool for 1 hour before removing rim off pan. Refrigerate 4 hours or overnight, top with cherry pie filling and whipped cream if desired.
