Quince Marmalade or Jam, Recel Ftoi in Albanian is my moms favourite! Growing up I called them dunja pronounced dunya, as my mom grew up in Macedonia, so that is what she always calls them…just recently I found out in Albanian they are called ftoi, for the jam I grew up and still call it marmalat which is how it is said in Albanian as well as recel. Quince are delightful smelling fruit that are not edible raw, but they do make tasty jams and fillings for cookies or pies. …
Peach or Pjeshke in Albanian these cookies are popular in Italy and other south European countries in the Mediterranean such as Albania, Macedonia, and Croatia, they are made on religious holidays, weddings and special occasions.

Raspberry freezer jam, another favourite of mine, and so easy to make! I get my raspberries from the same place I get my strawberries, no pesticides all natural, which is great cause raspberries are super sensitive! They turn to mush quite easily, so with these ones I just lightly rinse with my spray hose instead of my faucet, and they are ready for jam!

I love peaches, especially homegrown Ontario peaches, when in season they are delicious! I love peaches when they are a bit soft and really juicy, my son likes them hard and a bit unripe. The perfect peach for jam is the one in between, not totally soft, and not hard, should be juicy not dry. If the peaches are too ripe and juicy, you will end up with a runny jam. …
I had about a cup worth of strawberries left from the season, I did make a cobbler last night with strawberries and rhubarb and what was left of the strawberries I decided to bake something instead of freezing the rest! I did get to make some freezer jam with the other quarts of strawberries and that is what I used in these swirls, that is why the jam is noticeably fresh and bright!
I had hoped to make these with ricotta but didn’t have any and was not leaving the house in this weather!
