This is another favourite dish of my daughter Dina’s!
What you will need:
- 1lb ricotta cheese
- 1 pkg fresh spinach
- 1 small onion
- 1 egg
- parmesan
- 24 oven ready cannelloni
- 1 jar of homemade or store bought marinara sauce
- 3/4 cup crumbled up feta cheese
- mozzarella and parmesan cheese
Chop onion and spinach saute in pan till spinach wilts and onions soften season with salt. Cool down and mix and combine with ricotta, feta and egg season with salt. Pour half of marinara sauce in pan, take the filling and fill pastry bag or freezer bag (make a cut in a corner ), fill the cannelloni with the filling and place in pan. Cover with remaining sauce. Top with fresh mozzarella and parmesan bake at 325 for 45 mins.
Tried out this recipe today, and it was very nice. I used 450g of ricotta and added some shredded mozzarella and some parmesan to the mix. Didn't have cottage cheese or feta, so skipped those two cheeses. For the sauce, I tried some of the new Hunt's brand Tomato Sauce with onions, spices, and herbs, and for seasoning, I added some salt & pepper and about 1 tsp each of basil & oregano. This recipe was soooo easy. The longest part was stuffing the shells. I never made cannelloni before but found that it's easiest and quickest just to use your fingers to stuff the shells 🙂
