One of my favourite foods are pancakes! I just love them….breakfast, lunch or dinner it doesn’t matter when, I am always down for some yummy fluffy pancakes. My mom always made apple sauce or blueberry sauce with pancakes or french toast…I actually prefer my pancakes only with maple syrup, but my kids and hubby love it with fruit!
This is my favourite pancake recipe it didn’t take long to perfect it, the addition of extra baking powder makes them super fluffy!

What you will need:
- 1 egg
- 1 and 1/2 cups buttermilk*
- 1 1/2 cups all-purpose flour
- 1 tbsp sugar
- 3 tbsp melted butter
- 1 tsp baking soda
- 3 tsp baking powder
Add egg, melted butter and buttermilk to the dry ingredients.
Stir only until blended.
Heat your non stick pan or cast iron pan.
Using a ladle, spoon batter onto hot pan or griddle and shape into a circle. Cook on 1 side until small bubbles appear. Flip and cook the other side. Brush with butter between batches if desired.
Makes 6 large pancakes, or 8 medium size like in the photo’s. You may double the recipe if you need more.
*You can make your own buttermilk with organic milk and 1 tbsp vinegar
For blueberry sauce:
- 1 1/2 cups organic fresh or frozen blueberries
- 1 tbsp cornstarch
- 1 tbsp white or brown sugar to sweeten (you may add more)
- 1/3 cup water
Combine all ingredients in a 2 qt pot, cook on low to medium heat. If its too thick add a little more water, if its too thin add more cornstarch. You may add more sugar if you like.
When adding cornstarch, do not directly add it, take a little cornstarch start with 1/2 tsp and stir in a little cup with water making a paste, then quickly whisk in.
For apples:
- 5 organic apples
- 200 ml organic apple juice
- 1 1/2 tsp cinnamon
- 1 tbsp brown sugar (you may add more)
- 1/2 tbsp cornstarch
Peel, core and slice apples and combine with other ingredients in a 2 qt pot. Cover with lid and cook on low heat till the juice and cornstarch thickens, apples will be soft but firm. If it’s too thick add a little more water, if it’s too thin add more cornstarch.
