Yufka is a thicker filo dough, closer to homemade texture. If you do not have the time to make homemade dough this is the perfect alternative.
What you will need:
- 3 sheets of yufka (thick filo dough)
- 2 bags of spinach (towel dry the water from spinach)
- 3/4 cup crumbled feta cheese
- 1 453 gr container of cottage cheese
- 4 springs of green onion chopped
- 1 1/2 cups of milk
- 3 eggs
- 1/2 cup of canola or olive oil
- salt
Preheat oven 375. Combine spinach, feta,cottage cheese and onions season with 1/2 tsp salt.
In a mixing bowl take milk, eggs, and oil whisk altogether season with 1/2 tsp salt.
Grease large 16x12x2 rectangular pan or 15x2inch round pan if yufkas are larger, then fit into a larger pan(most large baking pans are found in Mediterranean stores) .
Take 3 yufkas and use 1 and half sheets per layer, one and half for the bottom and top.
Pour half the milk mixture on top spread evenly. Fill in with spinach and cheese mixture.
Cut into squares, pour over the milk mixture evenly over the yufka. Bake in oven at 375 for about 45-55 mins until golden and crsip on edges. remove from pan and serve
Keep in mind your in control of the salt…feta cheese is a salty cheese…so you will not have to use much salt. I dont measure the salt..I go by taste testing while making it
*note* this sticks to the pan….in my experience if u place parchment paper to the pan after greasing it….it helps with the clean up!:)
