Was searching for a blueberry buckle recipe on the net, I didn’t really find much differences in the recipes, I choose this recipe from allrecipes.com to follow and it was so good, I am not a big blueberry fan and I loved it!
What you will need:
- 1/4 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 11 oz fresh blueberries
In a mixing bowl, cream butter and sugar. Beat in the egg. Combine the flour, baking powder and salt, add to the creamed mixture alternately with milk. Fold in the blueberries. Pour into greased 9-inch square baking pan.
For topping:
- 2/3 cup sugar
- 1/2 cup flour
- 1/2 teaspoon cinnamon
- 1/3 cup cold butter or 1/4 veg oil ( I used oil instead of butter)
For topping, combine the sugar, flour and cinnamon in a bowl; add in oil, mix until crumbly Sprinkle over batter. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean.
