Berry Crepe Cake, doesn’t that sound berrylicious? It sure is. Ahh, I haven’t had fresh berries in forever, well not since the summer.
Hubby went shopping in the States and saw these organic strawberries and raspberries so he got me some…so sweet!
I was so excited and couldn’t decide on how to enjoy them. I didn’t want to just eat them, I wanted to make something fabulous!
I was making palachinka that day so I thought I would turn it into a crepe cake! It’s so easy to make and tastes amazing! The kids absolutely loved it. Great idea for a party! It tastes so light, and you can use any berry you have. Blueberries would be great too!
What you will need for crepes:
- 3 eggs
- 1 cup 1% or 2% milk
- 1/4 cup water
- 1 cup flour
- 1/4 tsp salt
In a large bowl, combine ingredients and mix well.
Heat a non stick pan, you may use some veg oil or butter with paper towel just brush the pan, use a 1/4 cup measure as a scoop, then pour batter shaping into a thin circle in the pan, I lift the pan and make the circle by turning the pan.
When edges of crepes turn golden start to curl up and flip cook other side. Turn onto plate. Makes 10-15 palachinkas (depending how big you make them).
For filling and garnish:
- 500 ml whipping cream ( you will need 2-3 cups worth of whipped cream)
- 12 oz (2 pkgs) fresh organic raspberries
- 1 lb fresh organic strawberries
- 2-3 spoons of raspberry or strawberry-freezer-jam
- 2-3 tbsp icing sugar
Beat the whipping cream until it becomes whipped cream. It will make 3-4 cups worth of whipped cream. You can use the extra for something else if need be. Add a couple spoons of icing (powder) sugar for sweetness. Take a hand full of raspberries and gently break into the whipped cream. Add a tablespoon of jam and gently fold in the whipped cream.
Put it all together:
Allow your crepes to cool. I place them on a cookie sheet helps to quickly cool the crepes rather than have them stacked up.
Drizzle your platter with the extra jam. Place one crepe on plate, and spoon over a tablespoon worth of whipped cream/fruit mixture over the crepe. Spread evenly and start layering with the crepes and filling.
Ending with a plain crepe, garnish with fresh berries. Dust with icing sugar and garnish with the rest of the fresh berries. Enjoy!
