Pancar salatasi means beet salad or dip in Turkish, it’s like tzatziki ot tarator made with beets instead of cucumbers. I found these lovely candy & golden beets at the grocery store, so I made three different dips. They’re all naturally gorgeous in colour, you can make it with different colour beets for a pretty presentation or just make it with one, all are perfectly wonderful!
The lighter coloured beets are light in flavour so if your not a big beet fan you might want to try them. This is a great dip for a veggie table or a dipping sauce for sandwiches or dinner.
I used two of each coloured beets, and used 10 heaping tablespoons of yogurt, and divided the yogurt in equal in amounts.
What you will need:
- 2- 3 beets
- 4-5 heaping tbsp Balkan or Greek plain yogurt
- 2-3 cloves garlic grated
- 1 tbsp mayonnaise
- salt to taste
Grate the beets, and garlic. The light beets are dry so no need to squeeze the liquid out, the dark beets are juicy, you can use the rich dark juice for another purpose if desired.
Stir in the yogurt, mayo and salt. Combine well, adjust seasoning and chill. Serve cold.
