One of my favourite cakes to make in the winter, its comforting and the aroma of cinnamon and apples is so inviting! So call a couple of friends over…put a pot of coffee on, and enjoy some yummy coffee cake! I am sure they will love you for it!
I revised this recipe from one of my old cook books called Company’s Coming, and made it simpler to follow. To make things easier for yourself, organize all your ingredients, and have all your mixing bowls and cups ready to use, you will need a few of each.
What you will need:
- 1- 3/4 cups buttermilk*
- 2-3 apples, peeled, cored and thinly sliced
For Cake Batter:
- 3/4 softened unsalted butter
- 1 3/4 cups sugar
- 2 eggs
- 1 tsp vanilla
- 3 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
For Streusel:
- 2/3 cup sugar
- 1/2 cup flour
- 2 tsp cinnamon
- 1/4 cup olive oil or cold butter
First off make the streusel topping, I make mine with olive oil, I just drizzle it in and mix with my hand until it turns out to the right consistency. Set aside.
In a mixing bowl sift ( I use a whisk) together the flour, baking soda, baking powder and salt.
In a another bowl, cream butter and sugar until light and creamy, add in eggs one at a time. Add in the vanilla.
Peel, core and slice apples.
Add in the flour mixture to the butter butter mixture, alternating with the buttermilk in 4 additions, ending with the flour.
Spoon half the batter into a greased 9×13 inch pan and lay the sliced apples in a single layer. Sprinkle 1/2 cup of the streusel topping and cover with the remaining batter. Sprinkle with remaining streusel and bake at 350 for about 40 minutes. Check with a toothpick, center should come out clean.
*To make your own buttermilk, combine 2 tbsp of lemon juice or vinegar with milk.
