I’m back…did you miss me? It has been a while I know, but after a much needed break I am back to blogging and posting on Instagram! I am a little rusty so please forgive me! I so needed this time off…time to relax to think and enjoy some time with my family. Blogging does take a lot of time and honestly between social media, photos, writing posts, I just needed some time off. I can’t promise that I will be on all the time like I used to, it is impossible!
I started blogging seven years ago, and I already have a great number of recipes posted on here. I want to continue to be genuine with my posts and share recipes with you that are as new and unique as possible. It is hard to come up with new recipes all the time. Mostly everything is already out there with a tweak or two.
I even take ideas from my own recipes and change it up with a new twist…nothing wrong with that! Take this recipe that I am sharing with you today! I got the idea from my avgolemono-soup, I made it a few weeks ago with rapini and thought I would make it this time with acini de pepe, a pasta that my aunt Angela used to make her chicken noodle soup with. Well, my experiment turned out delicious and it also has a name haha! Turns out it’s called Italian wedding soup. I call it my version as I didn’t follow any recipe; I just made it on my own.
What you will need for meatballs:
- 1 lb ground beef
- 1 egg
- 2 tbsp grated parmesan cheese
- 1 finely diced shallot or small onion
- 1 grated clove of garlic
- 1/4 cup bread crumbs
- salt and pepper to taste
- 1 tbsp freshly chopped parsley
For soup you will need:
- 1/2 cup acini de pepe
- 3-4 cups freshly washed and chopped rapini
- 8 cups boiling hot water
- a pinch of turmeric (for colour~optional)
- salt to season
Prepare the meatballs by shaping them into small balls, and then set them aside. Bring water to boil in a large pot. Season with salt and add a pinch of turmeric for colour.
Rinse the rapini and chop. Add the meatballs to boiling water, and cook for five minutes. Then add in the pasta and rapini. Taste and adjust by adding salt as needed. Cook on medium heat for 10 to 15 minutes, until the pasta and meatballs are done.
Remove from heat, and enjoy!
