This time of the year reminds me of these soft chocolate macaroons, my aunt would make them all the time, they were one of my favourite treats as a kid! This is the recipe that she shared with me, and now I make them for my kids.
What you will need:
- 3/4 cup evaporated milk
1/3 cup sugar
3 cups semi sweet chocolate chips
1 1/2 cups coconut
1 1/2 cups quick oats
1/2 cup ground walnuts (optional)
Ramadan version: Add some chopped up dates
Heat the evaporated milk and sugar until warm on low heat. Cook until the sugar completely dissolves, constantly stirring. Remove from the heat, add the chocolate chips. Stir well with wooden spoon or spatula until the chocolate melts. Pour in the other ingredients, combine until well blended.
Line 2 cookie sheets with wax paper drop spoonfuls of the mixture on the sheets. Place in fridge for 30 mins till firm.
Keep refrigerated until ready to serve. You can store the extra in the freezer:)
