The ingredient of the day today is….rice flour!
I surprised my mom tonight with her favourite fried plantains. She learned how to make them from one of her sister in laws, my aunt Beuna. Since it was a surprise, I couldn’t ask her for the recipe, so I came up with one on my own!
I experimented with flour and rice flour, I found the ones I made with flour were heavy and took longer to cook. Good thing I only made 4! The rest I made with rice flour, they fried quickly and with less oil.
Oh, and I must mention that ripe plantains means when they turn black; browned or spotted is not good enough. You want soft and sweet plantains, so if you got them yellow, you may need to wait over a week for them to be ready to use.
Update March 2016—> The best way to describe fried plantains is like a donut with a slice of banana in the middle, it’s so delicious. Since I first posted this recipe in January 2012, it has been a regular in our house, everyone loves them!
*What you will need:
- 2 ripe plantains
- 1 cup white rice flour
- milk
- 1 tsp baking soda
- dash of salt
- 1/2 tsp sugar
Combine rice flour, baking soda, salt and sugar in a bowl and pour in a few tablespoon of milk. Stir adding more milk as needed to form batter; should be the consistency of a pancake batter.
Peel and slice plantains, and dip into batter. Add a few tablespoons of oil to a frying pan. Add 5-6 batter dipped plantains at a time to a hot pan. Add more oil if needed.
On medium heat, cook the plantains on both sides, then place fried plantains on a paper towel lined plate to soak up the extra oil.
Serve with honey and icing sugar if desired. Enjoy!:)
*Note: You may need to make more batter depending on the size of your plantains, usually this amount is enough. 🙂
