Here’s a story of a girl who thought she can make pomegranate jelly with ease! Until she woke up and reality hit her, wake up you can’t do this on your own! Sure I’m strong…but not that strong.
After squeezing the life out of three pomegranates and only getting one cup…yes you read correct one cup, I needed three! I went to the grocery store in the middle of all this and picked up a bottle of ‘Pom’ pomegranate juice. What a save! Open the bottle up and perfect, two cups of juice plus my one cup and I got my three cups! Whew!
What you will need:
- 3 cups pomegranate juice (473 ml bottle makes 2 cups)
- 5 cups sugar
- 2 pkg of Certo (prepare according to directions)
- 1 tbsp lemon juice
Stir the sugar and juice together for 3 mins, let sit for 10. Stir in Certo for 3 mins. I added some fresh pomegranate seeds for texture.
Spoon in clean glass jars or freezer jars and let rest room temp for 24 hours to set.
Refrigerate or freeze.
Stays fresh in fridge for 1 month, freezer 6-8 months.
