Mmmmm homemade tomato soup…
What you will need:
- 2 cups chicken broth
- 1 28 oz can of diced tomato’s ( my favourite American brand is Dei Fratelli in Canada its Unico)
- 3 eating tablespoons of orzo (not baking tbsp)
- 1 tbsp butter
- 2 chicken cubes if broth is not already seasoned
In a pot add the broth and diced tomato’s and with hand held blender, blend till no more chunks of tomato are visible.
Bring to a boil, add maggi cubes if using.
Add the orzo and on medium heat continue to boil till noodles are tender.
At the end add a tbsp of butter or a 1 tsp of duck fat…yes you heard me right! Duck fat is full of flavour! I keep it in my fridge and add a spoon in many different dishes especially rice dishes….amazing flavour! No one can guess when they taste it, all they know is that something made the food taste real good….and that is my mama’s secret…I don’t think she minds me sharing with ya;)
Serve right away! Orzo tends to thicken soup rather quickly! If you have leftovers, add some more broth when reheating it!
