- 2 cups flour
- 2/3 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 2 eggs
- 1 stick butter, melted
- 1 cup buttermilk
- 1 tbsp lemon zest
- 3/4 cup frozen or fresh blueberries
- 3/4 cup frozen or fresh mixed berries
- mixed berry jam or preserves
Strudel topping
- 1/4 cup flour
- 2 tbsp butter, softened plus 2 tsp veg oil
- 3 tbsp sugar
- 1 tsp lemon peel
- 2 tbsp pecans
Mix and make into crumbly texture.
Preheat oven 350.
Beat eggs and melted butter. Add buttermilk,lemon zest whisk to combine. Add dry ingredients stir to combine (somewhat lumpy do not over mix). Gently fold in fruit. Pour into greased muffin pan or use muffin liners. Add 1 tsp of mixed jam in the muffin, add half of batter then add the jam, top with batter. Its a nice little surprise. Prepare the strudel topping add on top of muffins. Bake in oven for 20mins.
