It was the spring of 1995, my mom got me The Lion King vhs and my grandfather and I had planned a movie night, just the two of us, since my mom and grandma had plans to go out. I wanted to bake something for the occasion, I looked into the pantry and found everything I needed to make this cake!
The recipe was on a can of condensed milk, I changed it a little bit since then, but for the most part it’s the same. It is so simple to make, and it tastes amazing, the whole family will love it! It was the first cake I made by myself, even though it’s made with a cake mix, it’s still baking right? I was so proud of it, I remember my aunt coming over she and my mom loved it, in fact it’s been her favourite cake so far.
If you have a favourite homemade vanilla cake recipe that you like, you can make it instead of using a cake mix. I have made it both ways and it turns out great, I have to admit though cake mixes are super moist.
If you are in Canada, you can use Nutriwhip or Cool Whip or even whipped cream if you desire. If you are in the States, you can use Cool Whip or whipped cream. I like to use Nutriwhip when I make a layered cake, it’s more stiff and easy to work with when icing a layered cake. When I make this cake in a 13×9 inch pan, I like to use Cool Whip.
What you will need:
- 1 pkg golden or vanilla cake mix
1 can condensed milk
3 tbsp orange juice
1 tsp orange zest
Cool Whip, Nutriwhip or Whipping Cream
1 cup and 1/2 of toasted coconut
orange segments (1-2 oranges)
Prepare 13 x 9 inch pan or 2- 8 inch pans, grease pans and if you are using 8 inch pans, place a piece of parchment on the bottom of pans.
Prepare cake as directed on box.
Meanwhile, toast coconut in a pan either in the toaster oven or frying pan. It can burn quickly so stay close.
Allow coconut to cool down.
Combine condensed milk, orange juice and orange zest.
When your cake is baked, allow to cool. Poke holes with a knife or tooth pick all around the cake.
Pour over condensed milk mixture. Allow the cake to absorb the milk mixture before icing it.
Whip the Nutriwhip or whipping cream if using. Cool Whip should be fully thawed if using.
When cake is completely cooled, you may add the topping. If I am making it in a 13 x 9 inch pan, I leave it in the pan and spread the Cool Whip over the top, and then top with coconut and orange segments, or you can top with canned mandarins.
If I am making a layered cake, I spread the toasted coconut on the sides, and top with orange segments. Both ways are incredibly delicious and beautiful. Enjoy!
Yummy post & good thing I almost have all the ingredients but I might need little more whipping cream since the one I have is used but your recipe motivated me to bake something & who needs a reason or occasion to celebrate anyways, just bake a cake & enjoy the moment.
