This salad is very common in the Balkan regions , its easy to make, tasty and healthy! My mom always made this for us, and I love it, ,my kids do too! Pair it with a fresh loaf of bread,and you have a great lunch or a side dish for dinner.
- 1 can mixed beans
- 1 can kidney beans
- 1-2 tomatoes cut into bite size pieces
- 1/2 julian cut onion
- 1 cup finely chopped green leaf lettuce optional
- lemon juice and olive oil
- salt
Rinse beans in colander with cold water. Transfer to mixing bowl, combine with tomatoes, lettuce if using and onions.
Drizzle olive oil and season with lemon juice and salt. Keep refrigerated until ready to eat.
