- 3 eggs
- 2 cups sugar
- 1 cup olive oil*
- 200 gr softened cream cheese
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 -1 tsp vanilla or 1 pkt vanilla sugar
- 1 tsp salt
- 1/2 tsp nutmeg
- 1 medium zucchini (2 cups shredded)
- 1 cup chopped walnuts
- 1/2 cup sultana raisins
Place a piece of parchment paper in your loaf pans ( 2- 8 1/2 x 4 1/2 inch pans) or if you are using aluminum mini pans, grease the bottom of pans.
In a large bowl, beat cream cheese till smooth, add eggs, sugar, oil and vanilla. In a large bowl, whisk dry ingredients, on low speed gradually add into egg mixture. Fold in walnuts and zucchini. Divide into pans. Bake at 350 for 1 hour or till tooth pick comes out clean.
* I use light tasting or regular olive oil, I do not bake with extra virgin olive oil
