In need of a healthy and refreshing summer dessert? Look no further, here it is…watermelon cake! I have been seeing this watermelon cake being shared on Pinterest for a while now, and thought what a cool idea! My cake isn’t as large as the ones I have seen, I actually didn’t have the intention to make it, it all came about as I am really bad at cutting watermelon in perfect triangles, even my squares never turn out good! It wasn’t such a big watermelon so it was kinda easy to cut into.
You can top your cake with any kind of fruit you want, I just used strawberries and blueberries.
First off clean your watermelon I usually use vinegar and some dish soap, and rinse well. Washing your watermelon prevents any sort of bacteria entering the watermelon when cutting into.
Cut off top and bottom parts of watermelon, then cut sides. Pat dry watermelon with paper towel, icing will not stick if watermelon is juicy and wet.
For the icing I just made it without measuring. I used half a package of vanilla instant pudding, about 1/4 to a 1/3 cup milk and 3-4 heaping tablespoons of Cool Whip. You may need to use the whole package of pudding if you watermelon is larger, if so you need more milk and Cool Whip.
Ice the watermelon and add sliced almonds or any kind of ground nut you desire on the sides of cake. Top with fresh fruit and chill till your ready to serve. Enjoy!
