We had guests over for dinner last night, and with all the preparations the only thing I had left to do was dessert! I made some chocolate ice cream the night before, was planning on some cake or something….but no time. I decided to make macaroons but didn’t have any oatmeal, and no time to go out and get any either. I took a glance over to the table and noticed the bowl of dates sitting there, then I remembered these stuffed dates I love so much.
I thought the kids would love them so much more if I made them into balls! The grown ups loved them a bit more than the kids though, as the kids first thought they were Timbits, after the first bite they were kinda disappointed but then they continued and said it was good, but not a Timbit;)
These are super easy to make, you can make them with any nut you prefer, I personally love dates with walnuts.
What you will need:
- 25 Tunisian or Mejdool dates (or any soft date will do)
- 1/4 cup dark cocoa
- 1/4 cup coconut
- 3 tbsp water
- 1/2 cup whole walnuts
- icing sugar (optional)
Remove pits from dates, and add to food processor with all the other ingredients blend until becomes a paste. Remove from processor and shape into balls. Dip them into some icing sugar and enjoy!
