One of my favourite summer salads is this tomato and bocconcini salad, also known as caprese salad. My kids loved this when they were little, they still do! You can make it all year round, but tomatoes when in season are the best. I get my bocconcini cheese freshly made at the cheese factory in town.
I like to add a little vinegar for acid to the dressing, you can use lemon juice or what ever you prefer.
What you will need:
- Mini or medium sized bocconcini balls
- cherry tomatoes or whole tomatoes cut up
- extra virgin olive oil
- salt to season
- vinegar or lemon juice
- fresh basil
Combine all together and season with salt, adjust oil and vinegar to liking. Serve right away, enjoy!
