Tabbouleh is a popular Middle Eastern salad. It’s a healthy and delicious side dish or snack food.
- 2 bunches finely chopped flat leaf parsley
- 1/2 to 1 cup chopped fresh mint
- 1 cup fine bulgur
- 2 chopped firm tomatoes
- 1 green onion chopped
- 1/4 cup olive oil optional
- 1/4 cup fresh lemon juice
- salt to taste
Prepare bulgur place in large bowl, add 3 cups boiling hot water and let it soak till bulgur has doubled and softened. Chop parsley and mint finely with food processor or knife.
Add onions, tomatoes. Season with lemon juice and salt, mix in with bulgur.
Adjust flavour with lemon and salt. Keep refrigerated
