This is my first time using swiss chard, I had planted it in my garden just because I liked the way it looked! I didn’t even know if I would like it! It is something that grows well and looks nice in your garden! I noticed that the leaves were huge and ready for picking so I got my garden crocks on and went in there and cut them! Brought them in and thought…now what? What to make with it was the question of the day!
I rinsed the dirt off and started to chop them up as I would with any other greens. Had some filo dough in the fridge and had all the other ingredients needed so I thought hey why not! Swiss chard burek! I took a bite of it first though to make sure it wasn’t bitter and it wasn’t at all! Its a ‘sweet’ green! In fact this burek had to be the best tasting burek I have ever tried! Next year I will be planting a whole lot more Swiss chard in my garden!
So here goes for my Swiss chard burek!
What you will need:
- 4 Swiss chard leaves
- 1 container cottage cheese
- 3 eggs
- 1 cup crumbled up feta
- Salt to season
- 1 onion
- filo dough (thawed)
- 1/2 cup melted butter + 2 tbsp oil
Grease large pan and layer 2 filo on the bottom to cover pan, brush with melted butter, continue to layer and brush with butter till filo is half way done.
Spoon over the the filling and spread evenly over the filo. Continue to layer with filo and butter till filo is done. Brush top with butter and cut into squares or diamonds,bake in oven at 350 till golden. Let rest in pan covered with tea towel for 10 minutes before removing from pan.
Or you can make it like in the first picture that is posted above, its just another method of making it…I like both ways.
- 1 pkg filo dough
- 1 large bunch of Swiss chard
- 1 cup crumbled feta cheese
- 4 springs of green onions or 1 shallot
- 1 1/2 cups of milk
- 3 eggs
- 1/2 cup olive oil
- salt and pepper
Preheat oven 350.
Combine chopped, dried swiss chard, feta and chopped onions, season with salt and pepper(remember feta cheese is salty you don’t want to use too much salt, just a sprinkle of salt should be enough.)
In a mixing bowl take milk, eggs, and oil whisk altogether season with a touch of salt….taste make sure salt is to liking.
Grease pan place 2 sheets of filo dough, spoon over some milk mixture on top continue to do so in layers of 2 till 1/2 pkg of filo is done.
Add swiss chard filling then continue with the layering of dough and milk mixture. When done cut into squares or diamonds, pour over remaining milk mixture.
Let sit for 5 mins till liquid is absorbed.
Bake in oven for about 45 mins until golden and crisp on edges.
yumm!! looks so good. I really need to try making this type of pastry one day.
