We recently started to love sweet potato casseroles and pies, I find that many recipes out there are just too sweet, it’s probably why I never use to care for sweet potato casseroles, until I came up with my own recipe.
Sweet potatoes are already sweet so I use half a cup of brown sugar for the filling. There have been times where the potatoes are not as sweet so I had to add more sugar; taste and adjust as you make the filling.

- 3 medium sweet potatoes
- 1/2 cup dark brown sugar + if needed
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup evaporated milk + 1/2 cup more if needed
- 4 tbsp melted unsalted butter
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup butter
- 1 cup chopped or whole pecans
Boil potatoes unpeeled or peeled (what ever your preference) if unpeeled, peel when cool to touch. Cook until potatoes are tender, check by poking with a knife, mash potatoes with beater in mixer or mash with potato masher, or blend with hand blender for a smoother texture.
