Strawberry shortcake ice cream, the name says it all! Its creamy, has texture and is oh so delicious! My daughter wanted strawberry cheesecake ice cream, I wanted strawberry shortcake so we met each other half way, and boy did it ever turn out wonderful!
You will need a ice cream maker for this, and if you are familiar with making ice cream you need to freeze your bowl for 24 hours before making the ice cream.
I asked my husband to get me heavy cream, instead he got me half and half, it turned out good, but not as creamy as when I make ice cream with heavy cream, because I do add 2% milk which thins it out a bit. So you can use either it does work out with both.
What you will need:
- 1 cup cream (heavy or half and half)
- 3/4 cup 2% milk
- 3/4 cup sugar
- 1- 8 oz softened cream cheese
- 4 shortcake cookies broken up into small chunks
- 1/2 cup sliced strawberries
- 2 tbsp strawberry jam
Beat cream cheese till smooth, add in sugar, then add in cream and milk, beat till cream and frothy, you can use a hand blender or mixer for this. Refrigerate for 2-3 hours.
Slice strawberries and crumble up shortcake cookies.
Add in mixture to ice cream bowl, allow to stir till thickened, takes about 12 minutes. In the end, add in strawberries, jam and cookies, transfer to freezer safe container, freeze for a few hours or overnight.
