My kids love falooda! This was my first time making it, and it turned out great! I made mine more like a pudding rather than a drink, next time I will try making it as a drink and see how it turns out, but I really enjoyed it like a pudding.
I used a ready made falooda mix for this; it was easy to make. It comes in two flavours, I used strawberry. The falooda mix comes with vermicelli noodles, almonds, pistachios, raisins, what looks like chia seeds even though it is not listed on the box, and some black seeds that is not listed as well. So, you really don’t have to add anything to it! Simple!
It doesn’t have rose water flavour it in which I was happy about, it could use a little more strawberry flavour in the falooda itself, but was still good especially with the combination of strawberry gelatin.
*If you want it to turn out like a pudding, add the cornstarch. If you want it like a drink, omit the cornstarch.
Makes 4-5 servings depending size of dessert cups.
What you will need:
- 1- 195 gram box of strawberry falooda mix ( I used Laziza brand)
- 1 liter whole milk
- 1/2 cup water
- 1 and 1/2 tbsp cornstarch*
- 1 pkg strawberry flavoured gelatin ( I used Fosters)
- 1 cup hot boiling water
- 1 cup cold water
- vanilla or strawberry ice cream
- coarsely ground almonds and pistachios
Prepare strawberry gelatin first by stirring one cup of hot boiling water in a measuring cup with the gelatin, and whisk for 2 minutes. Stir in the one cup cold water. Transfer to a 8 x 8 pan. Refrigerate until set; takes about an hour. Cut into small squares.
To prepare the the falooda, pour the milk into a large pot, bring the milk to heat and quickly whisk in the falooda mix. Bring to a boil on medium heat for 15 minutes of cooking time, stirring occasionally.
Near the end, if you are adding the cornstarch, combine the cornstarch with a splash of cream in a small bowl and quickly whisk in the pot; falooda will thicken as it cooks for a minute or so. Remove from heat.
Allow to cool for 30 to 45 minutes. Add some gelatin squares in dessert cups, then pour the falooda mixture, layer again with the gelatin and then once again with the falooda. Refrigerate until cold; gelatin sets once again as it does get a little watery from the warmth of the falooda.
Top with ice cream, garnish with almonds or pistachios, and a drizzle of strawberry syrup if desired.
