This is a great hearty winter soup!
- For meat balls:
- 1 lb lean ground beef
- 1 egg
- 1/4-1/2 cup Parmesan cheese
- 1/4-1/2 cup seasoned bread crumbs
- 1/2 tsp red pepper flakes
- 1 tbsp Greek seasoning by Club house
- 1 tbsp fresh or dried parsley
- 1 tsp garlic salt
- salt and pepper
- 1/2 cup short grain rice
Mix ingredients well and shaped into balls.
For soup:
- 1 small onion chopped
- 3 cloves of garlic minced
- 2 cups spinach
- 1 small onion cut up into small pieces
- 1/2 cup short grain rice
- 1/2 tsp red pepper flakes
- 1/2 cup green or brown lentils
In a large pot add 8 cups of chicken broth or water (if using water add 2 chicken cubes for flavour)
Sautee onion in a pan with 2 tsp of olive oil, cook till tender add garlic and carrots,add to broth. Add in meatballs, spinach, rice, lentils, bring to a boil then lower to medium heat simmer till rice, lentils and meatballs are cooked.
