Spinach and eggs makes a perfect breakfast, lunch or dinner! My mother in law makes this and I liked it from the first time I tried it! Its a Turkish dish that I like to make for an easy meal that is nutritious and delicious. I had some souguk so I added some to it for added flavour and texture, I normally just make it with out, both ways are delcious!
I made it in a cast iron pan which makes it even more flavourful, and beneficial.
What you will need:
- 1 bag of spinach (rinsed)
- 5-8 eggs
- 1 onion or shallot
- salt and pepper
- 1/4 spoon of 7 spice seasoning optional
- lemon if making without the sausage
- 3 tbsp of chopped up sausage or soguk if using
Saute onion in butter or olive oil, add soguk if adding cook together with onion, add spinach season with salt, pepper and 7 spice, when it begins to wilt add eggs on top of spinach, and cover till steam cooks eggs. If your not using souguk then squeeze the lemon when the spinach wilts and then add eggs. Season eggs with salt. Enjoy!
