Spinach burek is probably the most popular burek in the Balkans, it’s my personal favourite!
What you will need:
- 1 pkg filo dough -thawed
- 2 bags of spinach rinsed and dried
- 1 cup crumbled feta cheese
- 4 springs of green onions or 1 shallot
- 1 1/2 cups of milk
- 3 eggs
- 1/2 cup olive oil
- salt and pepper
Preheat oven 350.
Rinse spinach and spin dry or use a tea towel or paper towel.
Combine spinach, feta and chopped onions, season with salt, remember feta cheese is salty you don’t want to use too much salt, just a sprinkle of salt should be enough.
In a mixing bowl whisk together the milk, eggs, and oil, season with a touch of salt, make sure salt is to liking.
Grease pan, place two sheets of filo dough on bottom of pan, spoon over some milk mixture on top continue to do so in layers of two sheets of filo, until 1/2 package of filo is done. When the bottom layer is done add the spinach filling, then continue with the layering of filo and milk mixture. When done layering the filo, cut into squares or diamonds, pour over remaining milk mixture.
Bake in oven for 40-45 minutes until golden and crisp on edges.
Remove from pan and transfer to a serving dish. Enjoy!
