As I was walking towards my herb garden today, I noticed my oregano was in full bloom, which inspired me, I felt like making a delicious sauce, my kids love meatballs….so tonight’s dinner is spaghetti and meatballs!
I also added something else from my garden…my secret ingredient…zucchini, which makes the meatballs moist and delicious!
For meatballs:
- 1 lb ground beef
- 1 small onion
- 1 clove of garlic
- 1/2 cup seasoned bread crumbs or Panko*
- 1/2 cup finely grated zucchini*
- 1/4 cup grated Parmesan
- 1 egg
- 1 tbsp ketchup
- 1/4 cup freshly chopped parsley
- 1 tbsp Italian seasoning or dried oregano
- Salt & Pepper
- Fresh spring of oregano
Chop onion, herbs and garlic, mix all ingredients and shape into small balls. Pan fry the meatballs till brown on the outside but not fully cooked in the inside.
Pour sauce in a pot, and add in the meatballs, bring to simmer and cook on low heat covered until meatballs are fully cooked. Serve with spaghetti. Enjoy
*Squeeze out extra liquid from zucchini
*You may need extra bread crumbs or Panko if its too soft/wet to shape into balls.
